Stuffed Mushrooms!

Super easy, super tasty, cheap and fast. A nice plate of these mushrooms will cost you under 5 bucks, less if you already have pesto around.

8-oz package of cream cheese, softened
8 oz. of medium or large white or crimini mushrooms
2 cloves garlic, crushed
3 Tbs. pesto, fresh or from the tube (I like to keep a tube of this stuff in the fridge for convenience--you can find it in the spice aisle of better grocery stores)
salt & pepper
basil for garnish (optional)

  1. Preheat oven to 375.
  2. Remove stems from mushrooms and chop.
  3. Combine chopped stems with cream cheese, pesto, garlic, and salt and pepper.
  4. Spoon stuffing into mushrooms, piling on top as necessary.
  5. Bake for 10 minutes or until cheese is just becoming brown. Garnish with basil, if desire


You can prepare these a day in advance. Refrigerate covered until ready to bake. Bake an additional 5 minutes.

You can also prepare and freeze batches of the cream cheese-garlic-pesto mixture. Then just thaw and add mushrooms for instant ap!
