Tomato, Basil & Mozzarella!
FRESH mozzarella is key. It'll be
a soft ball packed in brine. Kraft won't work here. Spend the extra
on the fancy tomatoes--it's well worth it. You want to use roughly equivalent
volumes of tomatoes & mozzarella.
This is so fresh and good, it's hard not to gorge
yourself (and so wholesome, you won't feel too bad if you do).

fresh mozzarella
fresh basil
tomatoes
salt & pepper
bread
- Slice tomatoes and mozzarella.
- Pull leaves off basil & discard stems.
- Arrange tomato and mozzarella, layered with basil leaves.
- Drizzle with olive oil. Sprinkle with salt & pepper.
- Serve with bread.
